Macia Olio Extra Vergine di Oliva - Azienda Agricola Macia
This olive oil comes from Azienda Agricola Macia, a historic property, located on a hill overlooking the Siena region in Tuscany. The property is surrounded by olive trees and vineyards and is known even in the region to produce superior quality olive oil. The quality of the oil they produce can be attributed for a part to the terroir - microclimat, soil, and also due to a high percentage of the Frantoio olive breed (other breeds: Coreggiolo and Maraiolo). Furthermore, Irene Niccolini, the producer, does not use any artificial fertilizer or pesticides. Both for sustainability considerations and because quality is more valued by Irene than maximising financial profit. This practice leads to lower yields but substantially better quality. The relatively early harvest of the unripe olives reduces the yield further but has a positive influence on the taste and quality (more distinctive fruitiness ("grassy", fresh), bitterness and spiciness (all indicators of quality). The entire harvest is done manually.
All these key factors, paired with the artisanal craftsmanship of Irene processing the olives results in this spectacular olive oil.

Acidity reference 2020: 0.18 (virgin olive oil can be between 0.3 - 2.0 with 0.3 being the highest quality - Macia oils is therefore even better vs the highest quality rating)
Annual production: only 1000 - 2500 liters
