Notes on wine and vinification:
Made from 100% Dolcetto grapes, harvested by hand in small red baskets. They reproduce the old method of foot pressing, only half of the grapes are pressed, the other part is only destemmed, leaving the grapes intact. This allows the winemaker to rediscover the fragrance of ancient flavors, with a less aggressive tannin and therefore more approachable early on.
The wine is obtained through spontaneous fermentation and using only indigenous yeasts, not clarified and unfiltered, aged in large cement vats.
