Notes on wine and vinification:
Produced only in exceptional years from the Cornole vineyard in the municipality of Farigliano which is located at an altitude of 420m above sea level. Mixed vineyard of old clones of Dolcetto grafted onto pure Rupestris (an ancient method).
This wine has a great structure and is very extractive. The color is red
very intense ruby and the aromas vary from fruit to spices, plum and
morello cherry, liquorice, vanilla and cocoa. On the palate it is rich and velvety, with beautiful persistence (sweet tannins).
This wine is spontaneously fermented with native yeasts and aged in large 25 hl French oak barrels which are steamed (not toasted). This is a hidden gem of a wine.
