Notes on wine and vinification:
This is a truly unique beautiful and special wine. Manual sorting on the table both in the vineyard and on the table back at the cellar. Fermentation of whole bunches crushed only with native yeasts in concrete vats. No punching down or pumping over. No use of sulfate before setting.
Ageing in demi-muids on fine lees for 18 months. Bottling without fining or filtration.
Taste characteristics: In its youth, (16 to 24 months after setting) lively and strict palate, on raspberries and violets. The wine often goes through a phase of austerity of varying length between 2 and 5 years of age, which opens a few hours before service. Evolves into a complex range ranging from tapenade to violet through iodine nuances. Perfect wine to pair with red meats and game birds. This is a wine for very special occasions.
