Notes on wine and vinification:
Manual sorting on the table. No destemming of the bunches. Fermentation with native yeasts in concrete vats. No use of SO2 before setting. Aging in barrels of 1 to 3 wines on fine lees for 18 months. Bottling without fining or filtration.
Taste characteristics: Currently and for the next 12 to 18 months on red fruits (cherry, strawberry) and spices (white pepper, cardamom), the structure of this wine will allow it to evolve gradually (over 5 to 10 years). ) towards aromas of garrigue and leather. An absolutely beautiful expression of Grenache with a hint of Mourvèdre.
