Blend of 90% Meunier and 10% Chardonnay from Baslieux Sous Châtillon (Marne Valley). The two grape varieties are planted and dispersed on the same plot (plot complantation), harvested in once to obtain the best maturity for the Meunier and the freshness of the Chardonnay. The plot is located in the Belval Valley, on marly clay soil.
Reasoned viticulture, central grassing, mechanical plowing without chemical herbicides. Treatments and sprays with pure algae and certified organic trace elements.
Dosage: Raw, natural, without dosage.
Maturation: Aging 36 months in cellar minimum on lath and on tip with cork stopper and staple.
Quantity: 1500 bottles per year
To the eye: The delicate color and golden yellow reflections are a sign of the maturity of the wine and the methods of Eric TAILLET's vinification. It provides a delicate and brilliant luminosity in the glass. The small bubbles are very active, dynamic on the surface and burst delicately in the glass.
On the nose: A lively first impression of citrus aromas and white fruits. It develops then on more delicate and lighter brioche notes.
On the palate: The nose echoes the palate. The bubbles convey freshness and dynamism. The palace is a continuity of the nose and confirms the notes of citrus aromas and touches of white fruits.
