Notes on wine and vinification:
Pinot noir rosé made in the ancestral method. This method, is a technique very similar to pet nat, is the oldest method to make a sparkling wine in a naturally in the bottle. The wine is bottles during the crescent moon phase and with the addition of dried grape juice or natural residual sugar from the first fermentation. This causes a re-fermentation in the bottle which creates the carbonation. Only native yeasts are used in the fermentation process. This wine has 2 years of bottle ageing.
